- Quick Cherry & Lime Cheesecake

Ingredients: 175 grams semi-sweet wholewheat biscuits (crushed), 75 grams butter (melted), 225 grams curd/cream cheese, 150ml double cream, 50 grams caster sugar, grated rind and juice of 2 limes or 1 lemon, 284 grams drained canned cherries (pitted). To glaze 2 - 3 tablespoons strawberry jam or red-currant jelly (melted)

1.Mix the biscuit crumbs with the better. Press the mixture firmly into the base of a 20cm/8inch spring form cake tin or other suitable shallow dish using the base of a clean jam jar.

2.Put the cheese, cream, sugar and lime or lemon rind and juice into a bowl and whisk together until smooth and thick. Spoon the mixture on top of the biscuit mixture and smooth the surface.

3.Arrange the cherries on top. Pour the melted jam or jelly over the cherries. Chill well.
