Arabic Coffee

Ingredients: 50 grams very finely ground Arabica coffee, 100 grams granulated sugar

1. Put the coffee and sugar into a coffee pot that has a wide bottom and narrow neck. Boil 500 ml of water in a small saucepan and pour it into the coffee pot all at once.

2. Heat the coffe pot until the coffee boils, stirring continuously. Remove the pot from the heat for and few moments and then replace it. Repeat the procdure twice more.

3. When the coffee boils for the third time, tap the bottomof the coffee pot sharply on a flat surface. The coffee grounds will then begin to sink towards the bottom. Pour the coffee into cups, adding 1 teaspoon of hot water to each cup. the grounds will then settle completely.
